I have a recipe a cuban co-worker gave me years ago for black beans and they are good...but my recipe is better with red beans
you gotta realize I'm in Texas and have a Louisiana born mother with a damn yankee (Dunbar PA) father.
Louisiana loves their beans red and Texans know to make chili without beans.
grew up eating beans in the chili since that is what my yankee dad thought was necessary and the beans helped stretch the meal for our big family (6 damn kids)
once I was old enough to know better and cook on my own...the beans disappeared. Chili is much better without the filler ingredients.
Chili with out beans is just a Sloppy Joe.

slow cook your onions first. I don't mean 20m slow cook, I mean put a pile of 'em in a pot with a knob of butter on low for like 4 to 5 hours. and by pile, I mean 3-5lbs. They cook down and have other uses if you don't need that many. That, sir, is a divine flavor for most dishes.
Sometimes I roast my garlic first.
I make my own chili powder - that is killer. just grinding up dried chili's, but getting a mix you like is key. I like a bit of heat with a sweet smokey balance.
I used to prefer Red Beans over Black beans in a lot of dishes but that changed somewhere along the way. I can do chili with the beans or without. If I do beans, its usually black beans. If I went out and got a high end slab of brisket for my chili over cheaper cuts, I would not put beans in.

Ill tell you what... if you forced me to only eat food from one area of the country, that northeast texas/Louisiana Area like around Longview or shreveport probably is my choice... the right blend of cajun, southern, and meat lovers...
