Here are their stats:

To be a little more objective, Parker had more receptions, yards, and YAC last hear than Martavis in less games.  He also had a lower drop ratio a drop every 28.5 catches vs Bryant's drop for every 12.5 catches, which is still by far Bryant's best year for drops.
Bryan't has more explosiveness.  His longest catch being 51 vs Parkers long first down long of 36.  Bryant also has the height, reach, and speed advantage.  He also has had more success in the NFL than Parker, and his ceiling is much higher IMHO.  I just don't see Parker as ever being a 9-10TD/yr guy.  If we take Parker, we're getting a tall possession receiver, and will no longer have a receiver that can take the top off the defense opposite of AB.  
I don't know if this is a bad move since JuJu is going to be featured more anyway.  Perhaps the Steelers are already thinking of moving JuJu full time, to the Z on 2 WR sets and sliding him inside to the slot on 3/4WR sets, as he did a bit of last year.
