Not sure what you like Mad, but for bourbons, I like sour mash, and I also like bourbons that finish oily with a hint of leather. Copper Fox makes an excellent bourbon that won't break the bank. Very inexpensive ryes, I love Bulleit Rye.
Whiskey for me, I love Irish whiskey's for their sweetness, and Scotches for their complexity. I drink a lot of Powers and Paddy's for Irish. I do not prefer Jameson. Tullimore Dew also has some great small batch stuff. Scotch, I can spend a day writing about. I love Speysides and Islays. Everyone has and knows the Highland Scotches, they are usually slightly oily, with caramel and vanilla tones. Speysides are a bit more complex. I used to drink a ton of Belvine when it was affordable, now it's out of my price range, but the double wood and 21yr port woods are excellent. For Islay Lagavulin 16 is my go to. Much earthier, oilier, and strong peat smoke, but more mellow than a Laphroig. Lagavulin just put out a 25yr, but it's $1200 a bottle, so I'll probably never try it.
